Red Onion Marmalade

Its Marmalade week. I love blue cheese, so I made some Red Onion Marmalade.  Makes perfect sense to me..!

Its pretty much just caramelized onions with generous amounts of Ruby Port and Red Wine (+bit of Red Wine Vinager and thyme), reduced until all sticky and yum.

The recipie was something like:

A large pan full of chopped red onion

Two cups of red wine vinegar

Half a bottle of red wine (or a full bottle if you can bring yourself to pour a whole bottle in – time of day you are making it I guess…)

Two cups of Port

One cup of Sugar

Cook with the lid on until the onion reduces in volume enough to be able to give it a good stir, then cook with the lid off. Took about one and a half hours.
