Reading through this month’s Food Magazine I found a recipe for Soda Bread by Bristol based Thoughtful Bread Company. It looked so simple I had to give it a shot – now I know why these chaps won an award for it.
Wholemeal flour, salt, sugar, bi-carb of soda, milk, olive oil and a splash of vinegar later I had some very unpromising looking batter. Then it came out the oven – it looked like bread! Really yummy, especially toasted, with blue cheese on top. Mmmm.
The next batch I make I am going to replace half of the wholemeal with rye flour, and stir in some Red Onion Marmalade before it goes in the oven. Will post the results over the weekend…
