<p>I have been shooting a bit of cheese lately for a new project &#8211; in our fridge at one point we had wheels of <a title="Cornish Yarg" href="http://www.lynherdairies.co.uk/" target="_blank">Yarg</a> and <a title="Cornish Blue Cheese" href="http://www.cornishcheese.co.uk/" target="_blank">Cornish Blue</a> and a fat Cheddar truckle. The only question has been what to eat all this cheese with? <a title="Fudges Bakery" href="http://www.fudges.co.uk/" target="_blank">Fudges</a> <a title="fudges bakery biscuits for cheese" href="http://www.fudges.co.uk/selection-biscuits-cheese-p-68.html" target="_blank">biscuits for cheese</a>? <a title="Rick Stein" href="http://www.rickstein.com/" target="_blank">Rick Stein&#8217;s</a> oat cakes? Toasted slices of Sourdough from <a title="Vickys Bread" href="http://www.vickysbread.co.uk/" target="_blank">Vicky&#8217;s Bread</a>?</p>
<p>And now to wash it all down with some wine!</p>

			<content:encoded><![CDATA[<p><a title="Great British Chefs" href="http://www.greatbritishchefs.com" target="_blank">Great British Chefs</a> have been at it again &#8211; and I have been flat out shooting food for them.</p>
<p>This time it is another beautiful app for the iPad all about the Summertime &#8211; with 21 chefs each contributing five recipes each to the app. The Summertime app, developed in association with <a title="Ocado" href="http://www.ocado.com" target="_blank">Ocado</a> will see Great British Chefs donate all proceeds to Action Against Hunger to support the charity&#8217;s life-saving work. The app was awarded the coveted Editors Choice in the <a title="Apple" href="http://www.apple.com" target="_blank">Apple</a> App Store. Brilliant!</p>

			<content:encoded><![CDATA[<p>So I knew work would would go a bit quiet during the Olympics this year &#8211; I saw it happen during the Sydney Games in 2000 when I was working for Kodak (R.I.P.).<br />
Gold Medal tally aside, I have been kept busy working on a very exciting new project about food in the South West &#8211; more to be revealed soon.<br />
In between this project and the jobs that have been relentlessly postponed due to rain, I would have thought that given the extra free time I would get some more use out of the wood fired Pizza oven and over sized BBQ I built last year&#8230;</p>
<p>&#8230;but it seems it does not matter how Australian you can&#8217;t BBQ in a downpour.

			<content:encoded><![CDATA[<p>Spent some time recently in the South of France &#8211; they should call it Duck Country.</p>
<p>Visited a Foie Gras producer to try and get to the bottom of how I feel about eating this super tasty stuff &#8211; unfortunately it turned out that we were there at the wrong time of year: the Gavache over, the butchering done.  All of the duck in the area was canned up and ready to eat, so we will have to go back again&#8230;  We had a really good chat with the producer who talked about how none of the duck was wasted, the whole bird was used for different products.</p>
<p><strong><a href="http://davidgriffen.co.uk/food-photography-blog/wp-content/uploads/2012/07/david-griffen-photography-bbq-duck_0089.jpg"><img class="alignleft size-medium wp-image-304" title="david-griffen-photography-bbq-duck_0089" src="http://davidgriffen.co.uk/food-photography-blog/wp-content/uploads/2012/07/david-griffen-photography-bbq-duck_0089-199x300.jpg" alt="" width="199" height="300" /></a>It&#8217;s all about the Gavage&#8230;</strong></p>
<p>In an nutshell, the Gavage (force feeding of corn / nuts) is the thing that seems to be the sticking point &#8211; generally the birds are free range and have a happy life up until the month or so of Gavage. The birds are then dispatched, butchered, and canned up.</p>
<p>After a bit of reading when getting back home to Cornwall, I found that I cant shake to connection between this tasty snack and the reality of its production.  Happy to throw a couple of duck breasts on the BBQ though&#8230;!</p>

			<content:encoded><![CDATA[<p>I have been flat out over the last couple of months working on a new project based on South West food, cooking and produce.  It has made me acutely aware of just how much bounty we have on our door step here in South West. Up the road from our house is the truely wonderful <a title="Deli Farm Charcuterie" href="www.delifarmcharcuterie.co.uk/" target="_blank">Deli Farm Charcuterie</a> &#8211; producers of award winning artisan air dried salami &amp; meats. These guys make some really delicious stuff, suppling some of the top restaurants in the region with a properly inspiring ingredient.</p>
<p>You can buy their meat online, and the shop is worth a look, if only to have a giggle at the &#8216;Knob Ends&#8217;.</p>

			<content:encoded><![CDATA[<p>I always try to have a backup plan &#8211; producing photography you are dependent on so many electrical technical devices, all designed to stop working like swiss clockwork after 13 months.</p>
<p>I was under pressure on a food shoot recently using my studio lights, and the triggering remote stopped working.<br />
Not to worry, Plan B: I have a spare battery. But this did not fix the problem.<br />
Not to worry, Plan C: I have a spare triggering device. But this did not work either.<br />
Not to worry, Plan D: I have an old school sync cable. But this did not work either.<br />
Not to worry, Plan E: Gaffer tape a small camera flash to the top of the flash head battery.</p>
<p>Worked a treat. Flash heads have since been serviced!

			<content:encoded><![CDATA[<p>Last week we had the in-laws down to look after the kids &#8211; happens once in a blue moon. So where to go on a date on this very rare and special night? Nathan Outlaws Seafood and Grill.</p>
<p>&nbsp;</p>
<p>I have had the fortune of regularly shooting Nathan Outlaws food for over seven years and over this time I have enjoyed watching his food evolve. Along the way I have had the pleasure of a good solid nibble, but last week we were lucky enough to enjoy the best feed to date.</p>
<p>Feeling smart casual, we booked a table in Seafood and Grill rather than the fine dining restaurant.  With Redas and Pete on the grill, the food was stupidly good.  Simple in its presentation, for me it had echos of our recent munch around Spain, and for Maria the first Oyster that went beyond OK, to be classed as DELICIOUS.</p>
<p>Impeccable service, and thanks to Ian for some pink magic in a dessert glass at the end of the evening.</p>
<p>If I were marooned on a desert island, I would want it to be a Rock, just across from Padstow.</p>

			<content:encoded><![CDATA[<p>Recently I posted a shot of Torrejas on <a title="food photography facebook page" href="http://www.facebook.com/griffenphotography" target="_blank">Facebook</a>.  Its a Spanish / Mexican / Cuban dessert and one of the tastiest things I have ever eaten.</p>
<p>I had a shot at making it today, with a bit of South West spin &#8211; using Saffron Cake.  Looking online there are hundreds of ways to make Torrejas, but being a sweet tooth I opted for the least savory method. Some authentic sounding recipes calls for Piloncillo- a Mexican unrefined sugar, so I used Muscovado.</p>
<p>150 grams Dark Muscovado Sugar<br />
200 ml water<br />
1 vanilla pod<br />
1 star anise<br />
2 cinnamon sticks<br />
1 clove</p>
<p>Add all of the above into a medium pan and simmer uncovered over a low heat for 20 min, then allow to cool.</p>
<p>2 free range eggs<br />
100 ml milk<br />
8 slices of stale bread (or Saffron Cake)</p>
<p>Whisk the eggs and milk together in a bowl. Briefly soak the bread in the eggy mix to coat each side, then fry until golden brown in a non stick pan with a knob of butter.</p>
<p>Place the eggy bread flat on a tray and cover with the spicy syrup, and leave to soak until you can wait no longer.</p>

			<content:encoded><![CDATA[<p>We are recently back from Spain after shooting a bunch of apartments and some lifestyle stuff. Had a great time following Rick Stein&#8217;s advice and spent some time in Seville. In a nut shell, Seville rocks: winding cobbled streets full of people talking over food. The socializing seems to be the focus in this truly beautiful town &#8211; the food is almost incidental. That said, we ate like pigs.</p>

<p>It was Easter Sunday, and on the way into Seville we stopped at a road side truck stop cafe to give the boys their second Easter Egg hunt of the day in the sunny beer garden.  After seeing the perfectly weathered red linoleum table we were sat at for our coffee, I was inspired to order ham (ham, more ham!), this time to to photograph &#8211; it was the perfect table to photograph the rich red ham on. The delicious nutty fat-on-meat-on-bread made good tucker too!</p>
<p>After squeezing the car into town and eventually finding our apartment in the labyrinth of cobbled streets and myriad of ancient alleyways, we went off for a proper stroll.  After a few hours of battling the pusher through the Easter Crowd (Spain really does do Easter with spirit!) we escaped the crowds and blazing sunshine with a bolt across the river &#8211; and into the coolness of a busy tavern.  Our three year old slept in the pusher and we ate with pictures of bull fighters and saints falling off of the walls.  The fare was so simple and so tasty, and the beer was completely welcome.</p>
<p>If you get the chance to go to Seville, go! &#8211; stay! &#8211; and eat well!</p>
